BBQ SAUCE AND TRAIL MIX FOR FATHER’S DAY


Don’t rush out to buy Dad an expensive but boring present from the store this year.  Instead, make these two Father’s Day gifts that come from the heart, and are made in the heart of your home – the kitchen!

 

DR PEPPER BBQ SAUCE

 

1 large onion, chopped

4 cloves garlic, chopped

4 tablespoons butter

12-oz can Dr Pepper

1 cup ketchup

½ cup brown sugar

½ cup cider vinegar

1/3 cup Worcestershire sauce

3 tablespoons tomato paste

2 teaspoons chili powder

1 teaspoon pepper

1 teaspoon salt

 

In a medium saucepan, cook and stir onion and garlic in butter over medium heat for 10 minutes, until onions are tender.  Add all other ingredients.  Reduce heat.  Cover and simmer for 15 minutes.  Cook uncovered, until sauce begins to thicken (20-30 minutes).  Remove from heat.  Cool 10 minutes and then blend until smooth.  Keep tightly covered in fridge for up to two weeks.

 

CHOCOLATE DRIZZLED TRAIL MIX

 

3 cups nuts

½ cup sunflower seeds

½ cup coconut flakes

1 cup raisins

½ cup dried cranberries

1 cup chocolate chips

 

Mix together all ingredients except chocolate chips.  Spread the mixture on a waxed paper-lined baking sheet.  Melt the chocolate chips in the microwave or over a double boiler.  Pour the chocolate over the baking sheet in ribbons.  Stir to coat everything.  Let the chocolate cool, then break into pieces (like you would with chocolate bark).  Pack in an airtight container, and keep out of the heat.
